BOMB egg-salad


so it sounds weird. but it's delish.

trust me.

ingredients:
  • 1/4 cup cottage cheese
  • 1 tbs hummus
  • salt n' pepper
  • dijon mustard
  • 3 eggs (hard boiled, chopped, using only 1-2 of the egg yolks)
mix well in a bowl. place in fridge.
serve chilled with warmed tortillas!

almond, green apple + goat cheese salad


ingredients:
1.) butter lettuce + spinach mix (washed and rinsed)
2.) goat cheese (feta or cottage cheese also work nicely)
3.) sliced almonds
4.) green apple (washed and chopped)
5.) honey mustard vinaigrette (raspberry/balsamic might also work)
6.) cinnamon

directions:
place lettuce into bowl. add cheese, chopped apple, and dressing. sprinkle with cinnamon.

tofu tacos




these are so delicious.

feeling: hungry
craving: something savory
weather: cool

for tofu, you'll need:
  • 2 cartons firm tofu (obviously)
  • 1/3 cup wheat-free soy sauce
  • 3/4 cup water
  • 1 tbsp fresh minced ginger
  • 3 cloves minced garlic
  • 1 & 1/2 tbsp sesame oil (this is what makes it so good)
  • 1 & 1/2 tbsp sesame seeds
1. slice tofu into 1/2 inch blocks, Then put tofu on paper towels and put heavy plates/other objects on top to press out extra tofu-juice.
2. preheat oven to 425
3. in a bowl, mix soy sauce + water + ginger + garlic + sesame oil. Pour over the tofu (after it's been pressed + drained) into a shallow bowl/pan and let marinate for 20 min. or more.
4. sprinkle w/ sesame seeds, bake for about 40 min.

remove tofu from oven and let cool a bit.

for tacos, you'll need:

  • warmed corn tortillas (put in cloth towels and microwave)
  • shredded lettuce
  • salsa/pico de gallo/guacamole/hummus
  • fresh cilantro (chopped)
grap a tortilla (or 2 if they're thin), fill it with tofu, lettuce, salsa, guacamole, and top with cilantro

din-fast quesadilla


delicious morning or night :)

mood: feeling classic
craving: salty comfort
weather: chilly, clear skies

ingredients:
1. trader joe's brown rice tortillas
2. shredded cheddar + jack cheeses
3. fresh avocado (thinly sliced)
4. fresh cilantro (washed)
5. salsa
6. a couple of eggs (mine were from the neighbors' coop) - scrambled
7. half package turkey bacon
8. hummus (any flavor will do but red pepper is delicious)

directions:
1. place bacon in toaster oven on bake (follow package directions)
2. brown open tortilla in skillet on low-medium heat
2. add cheddar, sprinkle 1/4-inch layer evenly on one half
3. add scrambled eggs (seasoned to taste w/ salt n pepper)
4. add small amount salsa
5. add small amount hummus
6. remove bacon, let cool briefly
7. tear bacon into bite-size pieces, add to tortilla
8. top with remaining cheese
9. close tortilla + flip to cook other side
10. slice, let cool, top with fresh cilantro + salsa

devour.

this is not a fruit salad.

craving: something sweet + fresh + cold
weather: cloudy northern california fog in the spring

ingredients:
- cherries
- strawberries
- mango
- blueberries
- banana
- orange melon

directions:
- wash + slice fruit, place into bowl
- leave plain or garnish with simple syrup, whipped cream, or yogurt + toss
- enjoy :)

simple syrup = 2 parts water + 1 part sugar (dissolve sugar into boiling water, let cool)

sungod pizza


feeling: sungod
craving: something crunchy, savory, and salty
weather: sunny
this one's super hard.

shopping list =
tbl. fresh basil + shredded mozzarella + amy's rice crust pizza (frozen section of grocery store)

1. cook pizza according to package directions*
*NOTE on sungod (for lisa): you must REMOVE cardboard from bottom of pizza before baking to avoid the smell of burning cardboard coming from oven.
2. in last 6 min, sprinkle extra mozzarella onto top of pizza + return to oven.
3. remove pizza, slice, and sprinkle with fresh chopped basil

finish off with a jello shot. yum.

gf breakfast crepes
















craving: breakfast/fruit
weather outside: cloudy but bright/sunny
feeling: cheery

1 cup rice flour
1 tsp sugar
1/4 tsp salt
1/2 cup egg whites
1/2 cup(-ish) milk
1 Tbls butter, softened

mix all the dry ingredients.
add wet ingredients. only use enough milk to make a moderately thick but smooth batter.
pour onto lightly greased skillet by the 1/4 cup. flip when little bubbles form!

suggestions:
serve with fresh sliced strawberries/bananas, cooked cinnamon apples, nutella or yogurt;
sprinkle with cinnamon-sugar;
top with whipped cream;
fill and roll up
