for tofu, you'll need:
- 2 cartons firm tofu (obviously)
- 1/3 cup wheat-free soy sauce
- 3/4 cup water
- 1 tbsp fresh minced ginger
- 3 cloves minced garlic
- 1 & 1/2 tbsp sesame oil (this is what makes it so good)
- 1 & 1/2 tbsp sesame seeds
2. preheat oven to 425
3. in a bowl, mix soy sauce + water + ginger + garlic + sesame oil. Pour over the tofu (after it's been pressed + drained) into a shallow bowl/pan and let marinate for 20 min. or more.
4. sprinkle w/ sesame seeds, bake for about 40 min.
remove tofu from oven and let cool a bit.
for tacos, you'll need:
- warmed corn tortillas (put in cloth towels and microwave)
- shredded lettuce
- salsa/pico de gallo/guacamole/hummus
- fresh cilantro (chopped)
